Refrigerate fresh white truffles immediately at approximately +2°C to +4°C. Wrap each truffle individually in clean, dry absorbent paper and place it in a closed food-safe container, preferably glass. Fresh Tuber magnatum is generally cleaned shortly before use and shaved raw over a finished warm dish. It pairs well with eggs, pasta, risotto, potatoes, butter, Parmesan and mild cheeses. Avoid prolonged direct heat and strongly flavoured ingredients that can obscure its aroma.

Frozen white truffles have a softer texture and are more suitable for cooked preparations.
