What Are IQF Frozen Truffles?

IQF frozen truffles are truffles preserved by individual quick freezing for frozen storage beyond their fresh harvest period. Freezing retains the identity and useful culinary characteristics of the original species, while naturally changing the texture and potentially reducing aromatic intensity compared with freshly harvested truffles.

The frozen range may include Tuber aestivum, Tuber uncinatum, Tuber melanosporum, Tuber brumale, Tuber magnatum, Tuber borchii and Tuber macrosporum. Current availability varies by species, grade, format and pack size, so the individual product pages show the selections currently offered.

No. Frozen truffles remain the same biological species as the original fresh truffle, but freezing naturally changes their physical texture and may reduce aromatic intensity. Fresh truffles are generally preferred where fresh texture and table-side presentation are central, while frozen truffles are particularly useful for sauces, fillings, butter preparations, pasta, risotto and other cooked dishes.

Frozen truffles can often be sliced or grated while still frozen or partially thawed. If a recipe requires thawing, transfer only the quantity needed to the refrigerator and allow it to thaw gradually. Do not use a microwave, hot water or direct heat for thawing, and follow the storage instructions provided with the individual product.

Keep frozen truffles at the storage temperature stated on the product label, normally around −18°C for products requiring frozen storage. After delivery, remove the product from the transport packaging, check that the product packaging is intact and transfer it promptly to suitable frozen storage.

Whole frozen truffles allow you to slice, shave or grate the product yourself. Truffle pieces are practical for sauces, fillings, compound butter and preparations where whole-truffle appearance is less important.
