IQF Frozen Black Summer Truffle Slices – Tuber aestivum

Frozen Black Summer Truffle slices are prepared from wild Tuber aestivum, selected as A Grade, cleaned and machine-cut to a consistent thickness of approximately 1 mm. The slices are individually quick frozen (IQF) and vacuum-packed to provide a convenient, ready-portioned truffle ingredient throughout the year.

Black Summer Truffle has a naturally delicate earthy aroma with mild woodland and nutty notes. Its flavour is lighter than that of Black Winter Truffle, making it suitable for pasta, risotto, eggs, potatoes, sauces, butter-based preparations and other dishes where the truffle should complement the principal ingredients.

What A Grade Means

A Grade truffles are selected for maturity, firmness and sound internal condition before processing. The truffles are washed, inspected and cut into uniform slices. Pieces showing unacceptable softness, deterioration or visible pest damage are excluded during selection.

Because truffles are natural wild products, the precise colour, shape and marbling of the slices may vary between harvests. These natural differences do not change the declared species, cut or processing method.

How to Use Frozen Truffle Slices

Thaw only the amount required for immediate preparation, following the storage and defrosting instructions on the product label. For the best distribution, add the slices towards the end of cooking or incorporate them into a warm sauce, butter or other fat-based preparation.

Recommended uses include:

  • pasta, risotto and gnocchi;
  • egg dishes and omelettes;
  • potato purée and roasted potatoes;
  • butter, cream and mild cheese sauces;
  • mushroom preparations;

Frozen Truffle Compared with Fresh Truffle

Freezing makes the truffle available outside its fresh harvesting season and reduces preparation time because the product is already cleaned and sliced. After thawing, the texture will naturally be softer than that of fresh truffle. The product is therefore particularly suitable for cooked dishes, sauces, fillings, butter preparations and food-service applications where consistent slicing and easy portion control are important.

Storage and Handling

Defrost the required quantity under refrigeration and use it promptly. Do not leave the product at room temperature unnecessarily. Do not refreeze thawed truffle slices unless the current product label specifically permits it.

The stated shelf life is 24 months from the date of manufacture when the unopened product is stored continuously at or below −18°C. Always follow the date and storage instructions printed on the package.
