Fresh truffles are edible underground fungi valued for their natural aroma, flavour and seasonal character. Each species has its own harvest period, aroma profile and culinary use. Availability changes throughout the year according to the European truffle season.

The products displayed in this collection represent the fresh truffles currently available for ordering. Depending on the season, the selection may include Tuber magnatum, Tuber melanosporum, Tuber aestivum, Tuber uncinatum, Tuber borchii and other recognised culinary species.

White truffles such as Tuber magnatum have a highly volatile aroma and are generally shaved raw over warm finished dishes. Black truffles vary by species. Tuber melanosporum has a deeper winter aroma, while Tuber aestivum offers a milder earthy and nutty character. Black truffles can usually be used in a wider range of warm preparations.

Refrigerate fresh truffles immediately at approximately +2°C to +4°C. Wrap each truffle individually in dry absorbent paper and place it in a clean, airtight glass container. Replace the paper every day and use the truffles as soon as possible after delivery.

Fresh truffles pair well with eggs, pasta, risotto, potatoes, butter, cream, Parmesan, mild cheeses, mushrooms, poultry and selected meat dishes. Shave, slice or grate them shortly before serving. Avoid prolonged exposure to high heat or strongly flavoured sauces.

How to Use Fresh Truffles

Fresh truffles are best paired with simple ingredients such as eggs, pasta, risotto, potatoes, butter, cream, Parmesan, mild cheeses, mushrooms and poultry.

White truffles are generally shaved raw over finished warm dishes, while black winter, summer and autumn truffles can also be grated or gently incorporated into warm preparations. Avoid prolonged exposure to high heat.
