Fresh black summer truffle – Tuber aestivum B grade is a practical and cost-effective selection for sauces, slicing, grating and professional kitchen preparation. These truffles are generally smaller or less regular than higher grades and may show superficial cuts, scratches or other cosmetic imperfections. They retain the natural aroma, flavour and firm texture characteristic of fresh summer truffles.

B-grade summer truffles are particularly suitable when appearance is less important than flavour and usability. They can be sliced over finished dishes, grated into sauces or prepared for pasta, risotto, eggs, potatoes, vegetables and meat dishes.

What B Grade Means

  • Species: 100% wild-harvested Tuber aestivum Vittad.
  • Typical weight: Approximately 5–15 g per truffle.
  • Typical diameter: Approximately 1–3 cm.

Aroma, Flavour and Texture

Fresh Tuber aestivum has a mild to medium aroma with earthy, nutty, mushroom-like and fresh woodland notes. Its flavour is delicate and balanced, with subtle nutty and slightly sweet characteristics that complement other ingredients without overpowering them.

The exterior ranges from dark brown to black. The interior is usually pale beige to light brown with fine natural marbling. Texture is firm when fresh, with normal variations depending on maturity and growing conditions.

Best Culinary Uses

B-grade summer truffles are well suited to pasta, risotto, eggs, potatoes, vegetable dishes, meat preparations and light cream-based sauces. Slice or grate them shortly before serving, or add them near the end of cooking to preserve their delicate aroma.

For a fuller truffle character, combine them with ingredients that carry aroma effectively, such as butter, cream, eggs, mild cheese or potatoes.

Storage and Preparation

Store fresh truffles at 2–4°C in an airtight container. Wrap them in clean absorbent paper and replace the paper every day to control excess moisture. For the best aroma, texture and overall quality, use them within approximately 5–8 days of receipt.

Clean the truffles only shortly before use with a soft brush. Avoid soaking them in water, and dry them carefully before slicing or grating.
