Fresh Summer Truffle (Tuber aestivum) is a seasonal European truffle with a delicate earthy aroma, firm texture and mild nutty flavour. Its naturally balanced character makes it a versatile ingredient for pasta, risotto, eggs, potatoes, sauces and lightly seasoned meat dishes.

Terra Ross A Grade truffles are individually inspected and selected for freshness, firmness, maturity and good overall condition. Choose the required total quantity from the available pack-size options.

What A Grade Means

A Grade offers a practical balance between attractive natural presentation and culinary versatility. The selection consists predominantly of whole truffles with generally rounded or regular shapes, while allowing a limited proportion of naturally irregular, lightly scratched, cut or partially broken pieces.

Up to 30% of the total product weight may consist of truffles with these permitted physical variations. Truffles showing softness, decay, serious deterioration or visible insect infestation are not accepted.

A Grade is suitable for restaurants, professional kitchens and home cooks who require fresh truffles for shaving, slicing, grating and general culinary preparation without needing the highest presentation standard of EXTRA Grade.

Commercial grade primarily describes size, shape and physical condition. Aroma intensity varies naturally according to maturity, freshness, seasonal conditions and the individual harvest.

Individual Truffle Size

Individual truffles generally weigh approximately 15–100 g and measure approximately 3–8 cm in diameter. Because truffles are naturally formed underground, variation in weight, diameter, shape and surface appearance is expected.

The selected product quantity refers to the total weight supplied rather than the exact number of individual truffles included in the order.

Aroma, Flavour and Texture

Fresh Tuber aestivum has a delicate earthy and woodland aroma with mild nutty and mushroom-like notes. As it matures, the interior develops a pale beige to light hazelnut-brown colour with fine natural marbling.

The texture should be firm when fresh. Its aroma becomes more noticeable after slicing or shaving, particularly when the truffle is served over warm food.

How to Use Fresh Summer Truffle

Clean the truffle gently immediately before use. Depending on its shape and condition, it can be thinly shaved, sliced, grated or finely chopped. Add it at the end of preparation or shortly before serving.

Avoid prolonged cooking and intense direct heat, which can reduce the naturally delicate aroma of Tuber aestivum.

Recommended culinary uses include:

  • shaved or sliced over fresh pasta and risotto;
  • grated over scrambled, poached or fried eggs;
  • served with potato purée or roasted potatoes;
  • combined with butter, cream and mild cheeses;
  • finely chopped into sauces, fillings or compound butter;
  • served with mushrooms, poultry, veal or lightly seasoned meat dishes.

For the best balance, use restrained seasoning and avoid strongly acidic, heavily spiced or intensely smoked ingredients.

Freshness, Packing and Delivery

Fresh truffles are inspected and packed in absorbent paper, food-safe protective packaging and insulated packaging with cooling materials. Delivery availability and estimated transit time are shown at checkout.

Storage After Delivery

Refrigerate immediately at 2–4°C in a clean, dry, food-safe container. Replace absorbent paper daily and use promptly because fresh truffles naturally lose moisture and aroma over time.

Frequently Asked Questions About Fresh Tuber aestivum

Practical guidance on Black Summer Truffle identification, grades, storage, cleaning, delivery and culinary use.

Tuber aestivum Vittad. is a seasonal European truffle commonly known as Black Summer Truffle or Summer Truffle.

Fresh specimens typically have a dark textured exterior, pale beige to light hazelnut-brown interior with fine pale veins, and a delicate earthy profile with mild nutty and mushroom-like notes.

Yes. Black Summer Truffle is a common English commercial name for Tuber aestivum Vittad.

Summer Truffle, Saint-Jean Truffle and Scorzone are also used as alternative names for the species.

Fresh Tuber aestivum is a seasonal truffle whose availability depends on the natural harvest, maturity, weather conditions and regional growing conditions.

Actual availability may therefore vary during the season and between individual harvest periods.

Commercial grades describe physical characteristics such as individual size, shape, condition, visible defects and presentation quality.

Grade does not guarantee a fixed level of aroma or flavour intensity. Aroma varies naturally according to maturity, freshness, growing conditions and the individual truffle.

Store fresh Tuber aestivum at approximately +2°C to +4°C immediately after delivery.

Wrap the truffles in clean, dry absorbent paper and place them in a clean, closed glass container. Replace the paper every day or whenever it becomes damp and inspect the truffles regularly.

Fresh truffles are highly perishable and should be consumed as soon as possible after delivery.

For the best aroma, flavour and texture, use fresh Tuber aestivum preferably within approximately 5–8 days, depending on its condition when received and how it is stored.

This period is guidance rather than a guaranteed shelf life. Always assess the smell, firmness and overall condition before use.

Clean fresh Tuber aestivum gently shortly before preparation rather than washing it in advance.

Remove remaining soil carefully with an appropriate soft brush and only as much water as necessary. Dry the truffle before slicing, shaving or grating and avoid unnecessarily abrading the natural surface.

Fresh Black Summer Truffle is best sliced, shaved or grated shortly before serving and added near the end of preparation.

Gentle warmth can help release its aroma, while prolonged cooking and intense direct heat should be avoided because they may reduce its delicate aromatic profile.

Fresh Tuber aestivum pairs particularly well with pasta, risotto, eggs, potatoes, butter, cream, mild cheeses, mushrooms, seasonal vegetables, poultry, veal and other mildly seasoned dishes.

Restrained seasoning is recommended so that strongly flavoured ingredients do not overpower the truffle's naturally delicate aroma.

Open the transport packaging promptly after delivery and inspect the truffles.

Transfer them immediately to refrigeration at approximately +2°C to +4°C. Keep them dry in a clean, closed glass container lined with clean absorbent paper and replace the paper every day or whenever it becomes damp.

If the product arrives damaged, defective or in an unsuitable condition, contact Terra Ross promptly with photographs and the relevant order details.
