Instructions
- Cook pasta: In large pot of salted boiling water, cook farfalle 1 minute less than package directs for al dente. Reserve 1/2 cup pasta water, then drain.
- Sauté aromatics: Heat truffle oil in large skillet over medium heat. Cook onion until translucent (3-4 min), then add garlic for 1 minute until fragrant.
- Brown beef: Increase heat to medium-high. Add ground beef, breaking up with spoon. Cook until no pink remains (5-6 min). Drain excess fat but leave about 1 tbsp.
- Build sauce: Stir in beef stock, scraping up browned bits. Bring to simmer. Reduce heat to medium, then stir in cream, cheeses, and paprika. Cook 3-4 minutes until slightly thickened.
- Combine: Add drained pasta to skillet, tossing to coat. If sauce seems thick, add reserved pasta water 1 tbsp at a time.
- Add truffle: Remove from heat. Stir in truffle brisure until evenly distributed. The residual heat will warm it without cooking off delicate aromas.
