Fresh Black Summer Truffle (Tuber aestivum) is a seasonal European truffle with a delicate earthy aroma, firm texture and mild nutty flavour. Its naturally balanced character makes it a versatile ingredient for pasta, risotto, eggs, potatoes, sauces and lightly seasoned meat dishes.

What A Grade Means

A Grade offers a practical balance between attractive natural presentation and culinary versatility. The selection consists predominantly of whole truffles with generally rounded or regular shapes, while allowing a limited proportion of naturally irregular, lightly scratched, cut or partially broken pieces.

Up to 30% of the total product weight may consist of truffles with these permitted physical variations. Truffles showing softness, decay, serious deterioration or visible insect infestation are not accepted.

A Grade is suitable for restaurants, professional kitchens and home cooks who require fresh truffles for shaving, slicing, grating and general culinary preparation without needing the highest presentation standard of EXTRA Grade.

Commercial grade primarily describes size, shape and physical condition. Aroma intensity varies naturally according to maturity, freshness, seasonal conditions and the individual harvest.

Individual Truffle Size

Individual truffles generally weigh approximately 15–100 g and measure approximately 3–8 cm in diameter. Because truffles are naturally formed underground, variation in weight, diameter, shape and surface appearance is expected.

The selected product quantity refers to the total weight supplied rather than the exact number of individual truffles included in the order.

Aroma, Flavour and Texture

Fresh Tuber aestivum has a delicate earthy and woodland aroma with mild nutty and mushroom-like notes. As it matures, the interior develops a pale beige to light hazelnut-brown colour with fine natural marbling.

The texture should be firm when fresh. Its aroma becomes more noticeable after slicing or shaving, particularly when the truffle is served over warm food.

How to Use Fresh Summer Truffle

Clean the truffle gently immediately before use. Depending on its shape and condition, it can be thinly shaved, sliced, grated or finely chopped. Add it at the end of preparation or shortly before serving.

Avoid prolonged cooking and intense direct heat, which can reduce the naturally delicate aroma of Tuber aestivum.

Storage After Delivery

Replace the paper every day and inspect the truffles regularly. For the best aroma, flavour and texture, use them preferably within 5–8 days, depending on their condition when received.

Do not wash, slice or shave the truffles until shortly before preparation.
