Dried morels have an irregular natural shape and a distinctive honeycomb-like surface. Colour, size and shape vary between individual mushrooms and batches. Before rehydration they are dry and firm; after correct rehydration and thorough cooking they develop a tender texture and a concentrated mushroom flavour.

How to Rehydrate and Cook Safely

Soak the dried morels in warm water for 20–30 minutes. Drain and discard the soaking water. Boil the mushrooms in fresh water, drain, and repeat the boiling step with fresh water. Discard the water after each boil, then cook the morels thoroughly as part of the final dish. Do not consume morels raw or undercooked, and do not use the soaking or boiling water in recipes.
